E-Polylysine other name Epsilon-Poly-L-lysine (e-PL) is a homo-poly-amino acid characterized by the peptide bond between the α-carboxyl and ε-amino groups of 25-35 L-lysine monomers. e-PL shows a wide range of antimicrobial activity and is stable at high temperatures and under both acidic and alkaline condition(pH 2.0-9.0) .
