Viscosity: Isomalto-Oligosaccharide (IMO) syrup with the same concentration of sucrose solution viscosity is very close, while food processing is easy to operate than the caramel, for the organization and characteristics of sweets, cakes and other foods without adverse effects.
Heat resistance: IMO proform a excellent heat and acid resistance. Concentration of 50% syrup PH3,120 ℃ under prolonged heating will not decompose. Applied to beverages, canned and high temperature or low PH foods can maintain the original features and functions.
Moisturizing: IMO profore a good moisturizing,it help locking the water content for a variety of food and its quality,it also can inhibit the formation of crystals of sucrose and glucose. Bakery, dessert and other food starch as the main body, often a little store that line hardening, while adding ISOMALTOOLIGOSACCHARIDE can prevent starch aging, extend the storage time of food.
